PLANNED LABOR / PROJECTED SALES

24.6%

$220 below your chosen labor budget.

Total labor $1,600Target budget $1,820

Planning estimate: (wages + other labor costs) ÷ sales × 100. Use consistent periods and include all relevant labor costs. A percentage alone doesn’t tell you whether a shift is staffed well.

The hospitality labor cost formula

Labor cost percentage = (wages + other labor costs) ÷ sales × 100

Use the same period for every input. For example, compare one evening’s labor with that evening’s sales, or one week’s labor with that week’s sales. Other labor costs may include employer taxes, benefits, or other costs you consistently include in your operating review.

What should your labor target be?

The sample target is an example you can edit. Your operation’s service model, demand, staffing needs, and cost structure matter. This tool does not prescribe one labor target for every restaurant, bar, or motel.

What does a higher percentage tell you?

It can reflect higher labor cost, lower sales, or both. Review the inputs, guest experience, workload, and essential coverage before deciding what to change. Read the hospitality labor cost guide for a fuller operating review.
